Sips & Strategies - Inclan Brutal Bar

Since this is the first edition of Tremento’s Market Blend I thought I’d start with one of my all time favourite restaurants: Inclan Brutal Bar in Madrid.

Inclan Brutal Bar made me a fan from the very first visit. Going there is a full on experience – from the food and drinks to the edgy, lively atmosphere they’ve got it down to a science to make it a memorable one. And despite the presentation being a bit unusual the prices were the same as other Madrid restaurants at the time so it felt like a steal. Of course, it all starts with the basics: good food, drinks, and service. These are the foundation for everything that follows.

But what’s the experience I’m talking about? Let me tell you.

The menu at Inclan isn’t just delicious, it’s creative and fun. The dishes are named with a wink and brought to life with flair. Cocktails arrive in quirky glassware or ceramics and many of the dishes are “finished at the table”. Imagine a burrata injected with pesto at your table or a fish flambéed in front of you. This level of interaction turns a simple meal into a memory.

On my first visit the waiter handed me a business card with his name and asked us to leave a review and mention his name if we liked it. This personal touch felt genuine and reviews flooded in. This is rare in Europe and it worked wonders for Inclan’s visibility. I don’t think they still do this (they’ve made their name), but it was a good move back then.

Inclan’s branding is consistent across all social media too. Their Instagram is masculine, stylish and edgy with a red theme that makes every post feel cohesive and on brand. Even their interior has changed over the years to match this edgy and dynamic style.

I took inspiration from my visit there and brought the burrata-pesto experience back to a restaurant I was working with at the time. It was new in that town and the guests loved it – proof that small, memorable experiences make a big impact.
